Aged 12 months in a neutral oak barrel and 3 more months in a new French oak barrel (Alain Fouquet Cooperage). Thrice racked. Filtered, but un-fined.
This is our fifth year working with this gorgeous fruit – and it might be our last. We never got much, but we always coveted what we did get. Originally a component in our Lil’ Frankie blends, this Cab Franc has been a stand-alone varietal for the last 3 years. Rolling View Vineyard has an austerity and restraint unlike its next-door neighbors – one that suits Bordeaux varietals especially well. This wine has an amazing interplay of acid and tannin, a cool dusty spice and classic Cab Franc fruit. It’s hard to say goodbye to a good friend. Hopefully we won’t have to...
Willcox AVA - 98% Cabernet Franc from Rolling View Vineyard. Cochise County, AZ. 4,300 ft. elevation. Harvested Aug. 27th - 2% Merlot from Rolling View Vineyard, Cochise County. AZ. 4,300 ft. elevation. Harvested Aug. 20th - Sugar at harvest: 24.0 Brix
Destemmed but not crushed to an open-top, 3⁄4-ton bin. Cold-soaked 24 hours, then inoculated with specially selected yeasts (MT). Hand punched 3-4 times daily. Inoculated with Malolactic bacteria (Omega) around 7 Brix. Pressed at dryness after 10 days skin contact. Settled 2 days before barreling.
