Viognier was aged 4+ months in 100% neutral French oak (with minor lees stirring) before being blended in tank. Verdelho was aged entirely in stainless steel.
The higher acid & tart quince from Viognier are balanced with the richness, tropical fruit and spice of Verdelho. A crisp, clean palate with fruity aromatics.
66% Viognier Cochise County Arizona from Lawrence Dunham Vineyards at 4,900 Ft. elevation. 34% Verdelho Cochise County Arizona from Dragoon Mountain Vineyard at 4,300 Ft. elevation.
Cold-soaked 24 hours, then whole-cluster pressed. Chilled and settled 48 hours prior to racking. Fermented with specially selected yeasts in stainless steel at 55 degrees F for 26 days. Malolactic fermentation inhibited. This wine did NOT undergo heat-stabilization and is filtered but unfined. Residual sugar: <0.25%.
