Chardonnay was aged 4 months in 100% neutral French oak without lees stirring.
The unctuous, glyceriney Chardonnay – aged in neutral oak – is accented with the richness, tropical fruit and spice of stainless-steel aged Verdelho. A complex white wine with remarkable texture.
50% Chardonnay Cochise County Arizona from Fort Bowie Vineyards at 3,900 ft. elevation. 50% Verdelho Cochise County Arizona from Dragoon Mountain Vineyard at 4,300 ft. elevation.
Cold-soaked 24 hours, then whole-cluster pressed. Chilled and settled 36 hours prior to racking. Fermented with specially selected yeasts in stainless steel at 55 degrees F for 24 days. Malolactic fermentation inhibited. Chardonnay was aged 4+ months in 100% neutral French oak (without lees stirring) before being blended in tank. Verdelho was aged entirely in stainless steel. This wine did NOT undergo heat-stabilization and is filtered but unfined. Residual sugar: <0.25%.
