Tasting Notes
One of our more elegant and delicate wines of the 2013 vintage. Prior to fermentation, we pulled 15% of the juice from the Barbera fermenter into our Rosé fermentation. The higher skin-to-juice ratio of the red fermentation resulted in a denser, more concentrated wine. The bright red fruit and silky palate of the Barbera is accented with darker, more tannic Syrah for depth and ageability. Pair with a nice, romantic dinner. Only 2 barrels produced.

80% Barbera Cochise County Arizona from Fort Bowie Vineyards at 3,900 ft. elevation. 20% Syrah Cochise County Arizona from Deep Sky Vineyard at 4,300 ft. elevation.
Production Notes
Destemmed but not crushed to open-top, 1/2- and 3/4-ton bins. Syrah was left ~33% whole-cluster and ~15% of Barbera juice was bled off for Rosé production. Fermented with specially selected yeasts. Hand-punched 3-4 times daily. Pressed at dryness after 10 days skin contact. Induced malolactic fermentation. Settled 5-6 days before barreling. Twice Racked. Unfined and unfiltered.
