Our most exclusive wine of 2013 with only a single barrel produced. We believe this Tempranillo can hold its own with some of the greatest in the world.
100% Tempranillo Cochise County Arizona from Cimarron Vineyards at 4,300 ft. elevation.
Destemmed but not crushed to an open-top, 1/2-ton bin. Cold-soaked 24 hours, then fermented with specially selected yeasts. Hand-punched 3-4 times daily. Pressed at dryness after 10 days skin contact. Induced malolactic fermentation. Settled 4 days before barreling. Thrice Racked. Filtered but unfined.
Drink now or cellar 7+ years.
