Tasting Notes
One of our more special wines of the 2012 vintage. We produced just enough to fill a single barrel and had to top it with Tempranillo when needed. This complex wine has deep, dark fruit; a rich, tannic palate and a touch of Hungarian oak for more smoky character. Uncle Tannat is a special guy who doesn't come out that often, but when he does… look out!

95% Tannat and 5% Tempranillo Cochise County Arizona from Dragoon Mountain Vineyard at 4,200 ft. elevation.
Production Notes
Destemmed but not crushed to open fermenters. Cold-soaked 48 hours and fermented with specially selected yeasts. Hand-punched 3-4 times daily. Pressed at dryness after 13 days’ skin contact. Induced malolactic fermentation. Settled 5 days before barreling. Thrice racked. Unfined and unfiltered.
