Aged 6+ months in 100% neutral French oak, 3 months on lees without lees stirring.
90% Arneis, Cochise County Arizona from Dragoon Mountain Vineyard at 4,300 ft. elevation. 10% Malvasia Bianca, New Mexico Vineyards. 4,300 ft. elevation.
Cold-soaked 24 hours, then whole-cluster pressed. Chilled and settled 36 hours prior to racking. Fermented with specially selected yeasts at 55ºF for 28 days. Malolactic fermentation inhibited. This wine did NOT undergo cold-stabilization and is filtered, but unfined. Residual sugar: <0.20%
