2012 Admiral Star Sailor
Blend - red
New Mexico Vineyards and Cimarron Vineyard
Aug 25, Sep 7 and 11, 2012
Aged 10 months in 25% new French oak.
Our only wine made almost entirely with fruit sourced from New Mexico. Syrah, Carignan, Mourvedre and Grenache in a nod to the Rhone wines of France. Rich, spicy, red and dark fruit, earthiness, gaminess and a smooth finish that pairs with a range of foods. Only seven barrels produced.
42% Syrah, 29% Carignan and 22% Mourvedre, New Mexico Vineyards. 4,300 ft. elevation. 7% Grenache. Cimarron Vineyards. Cochise County, AZ. 4,200 ft. elevation.
Destemmed but not crushed to open half-ton fermenters. Syrah and Grenache were left approximately 20% whole cluster. Cold-soaked 48 hours and fermented with specially selected yeasts. Hand punched 3-4 times daily, pressed at dryness after average 12 days’ skin contact. Induced malolactic fermentation and settled 5-6 days before barreling. Twice racked. Unfined and unfiltered.
Drink now or cellar up to 4+ years.

My wife and I recently celebrated our 5 year anniversay at the enchantment resort in Sedona. Where we had the pleasure of tasting Star Sailor for the first time. This was not your typical wine it had flavor that is so hard to describe other than it was fully of happiness and love. It tastes of emotion! I will be looking forward to what this delightful new winery has to offer! Cheers and thank you for the wonderful experience.
