Tasting Notes
We made a killer Rhone blend back in 2013 and didn’t realize what a nice addition to our permanent portfolio it would be. After watching how incredibly that wine evolved over the last couple years and how people reacted to it, we had to bring Dr. Ron Bot back. This vintage combines dark and rich Syrah with the bright red fruit, spice and grittier tannins of Mourvedre and Grenache. There are a lot of layers to unravel in this one, and it should only get more interesting with time. One of our largest blends of the year at only 9 barrels.

Willcox AVA - 45% Syrah from Cimarron Vineyard. Cochise County, AZ. 4,300 ft. elevation. Harvested Aug. 20th - 22% Mourvedre from Juan Alba Vineyard. Cochise County, AZ. 4,200 ft. elevation. Harvested Sept 17th - 11% Mourvedre from Cimarron Vineyard. Cochise County, AZ. 4,300 ft. elevation. Harvested Sept. 6th - 11% Grenache from Cimarron Vineyard. Cochise County, AZ. 4,300 ft. elevation. Harvested Aug. 31st - 11% Grenache from Juan Alba Vineyard. Cochise County, AZ. 4,200 ft. elevation. Harvested Sept. 6th - Sugar at harvest: 24.9 Brix average
Production Notes
Destemmed but not crushed to open-top, 3⁄4-ton bins. All lots were left 10-15% whole cluster. Cold-soaked 24 hours, then inoculated with specially selected yeasts (Rhone2056, D254, VRB, CLOS, UV43, T73, etc). Hand punched 3-4 times daily. Inoculated with Malolactic bacteria (Omega) around 7 Brix. Pressed at dryness after 10 days average skin contact. Settled 2 days average before barreling.
