Tasting Notes
We’re excited to be working with small amounts of a few other varietals from Rolling View these days. This Cabernet Sauvignon – much like the Merlot and Cab Franc from this vineyard – has an Old World feeling to it that we absolutely love. Not richness, opulence or concentration; this wine is all about acid/tannin tension, bright fruit and intense Bordeaux spice. Only 1 barrel produced.

95% Cabernet Sauvignon from Rolling View Vineyard. Cochise County, AZ. 4,300 ft. elevation. Harvested Sept. 3rd - 5% Merlot from Rolling View Vineyard. Cochise County, AZ. 4,300 ft. elevation. Harvested Sept. 3rd - Sugar at harvest: 25.0 Brix
Production Notes
Destemmed, but not crushed to open top 3⁄4-ton bins. Cold-soaked 24 hours, then inoculated with specially selected yeasts (BDX & MT). Hand punched 3-4 times daily. Inoculated with Malolactic bacteria (Omega) around 7 Brix. Pressed at dryness after 13 days skin contact. Settled 2 days before barreling.
