Tasting Notes
This is our fourth year working with this gorgeous fruit – we don’t get lots, but we covet what we do get. Originally a component in our Lil’ Frankie blends, this Cab Franc has been a stand-alone varietal for the last 2 years. Rolling View Vineyard has an austerity and restraint unlike its next-door neighbors – one that suits Bordeaux varietals especially well. This wine has an amazing interplay of acid and tannin, a cool dusty spice and classic Cab Franc fruit.

95% Cabernet Franc from Rolling View Vineyard. Cochise County, AZ. 4,300 ft. elevation. Harvested Sept. 3rd - 5% Merlot from Rolling View Vineyard, Cochise County. AZ. 4,300 ft. elevation. Harvested Sept. 3rd - Sugar at harvest: 25.2 Brix average
Production Notes
Destemmed, but not crushed to an open top 3⁄4-ton bin. Cold-soaked 24 hours, then inoculated with specially selected yeasts (BDX & MT). Hand punched 3-4 times daily. Inoculated with Malolactic bacteria (Omega) around 7 Brix. Pressed at dryness after 13 days skin contact. Settled 2 days before barreling.
