Tasting Notes
The Syrah -- left 33% whole cluster for added tannin, spice and mid-palate richness -- contributes dark fruit, tannin and earthy spice. The Grenache adds a feminine layer of roses and red fruit while Carignan loads on more spicy/juicy raspberry character. A balanced wine great for pairing with a range of foods, this is our second largest blend of 2013 at seven barrels.

47% Syrah Cochise County Arizona from Deep Sky Vineyard at 4,300 Ft. elevation. 13% Syrah Cochise County Arizona from Cimarron Vineyards at 4,300 Ft. elevation. 27% Grenache Cochise County Arizona from Pillsbury Vineyard at 4,300 Ft. elevation. 13% Carignan from SW New Mexico at 4,300 Ft. elevation.
Production Notes
Destemmed but not crushed to open-top 1/2- and 3/4-ton bins. All Syrah was left ~33% whole cluster. Cold-soaked 24 hours, then fermented with specially selected yeasts. Hand-punched 3-4 times daily. Pressed at dryness after 10 days skin contact. Induced malolactic fermentation. Settled 5 days before barreling. Unfined and unfiltered.
